Pimiento Cheese has been called the "Pate of the South" and with good reason. It is a staple at every picnic, Sunday Social and the annual Master's golf tournament. My mom makes the best, but her's is very simple. You can dress it up all you want to. It still counts as Pimiento Cheese.
Ingredients
- Block of cheddar cheese, grated
- jar of pimiento, chopped
- half cup of Hellman's Real mayonaise
- dash of salt, pepper, dry mustard
- green apple, peeled and grated
Mix, chill and serve on toast or crackers or stuffed in celery.
My mamma always served her pimiento cheese on white bread. This is my least favorite way to enjoy it. I prefer it on something a little more crunchy. She was over to visit last week and left her copy of Southern Living for me to read. Don't you know they had a feature on Pimiento Cheese with suggestions on how to serve it that I had never even thought of. Can't wait to try it grilled on toast with crispy bacon!!!
Southern Living's other suggestions basically include substituting pimiento cheese where you would normally use regular cheese... like on grilled hamburgers or pizza or served with macaroni.
Some of the other suggestions I liked are:
Spread it on cornbread and broil until melted.
Spoon a dollop of pimiento cheese on a steaming bowl of chile or chile cheese fries.
Stuff into a seeded jalapeno pepper, wrap in bacon and grill over medium heat.
Spoon on to hot fried green tomatoes.
Spread on white bread and grill in a waffle iron. Serve with strawberry jam.
Serve it on gingersnaps or graham crackers.
Stuff into deviled eggs.
There is no wrong way to enjoy pimiento cheese!!!
